Easy Chicken Fajitas

Easy Chicken Fajitas- you’re rushed, you’re not sure what to get from the store and make for dinner- that is NEVER a fun feeling! Step in easy chicken fajitas. This dinner has helped me on a few occasions. It’s easy to put together, (I often already have these ingredients on hand) and it has some good flavor and tastes pretty yummy!

Feel free to adjust the seasoning and amount to your preferences. I honestly normally eyeball it and adjust to my taste, but to try to give some guidance I actually measured it out! This is feeding my family of five, so again modify to fit your meal needs (this does reheat pretty well- leftover fajita bowl anyone??)

3 Chicken breasts- cut into small strips

1 Vidalia onion chopped (I like to do thin, long strips but do you here)

2 red peppers cut into strips

1 Tbsp Mexican seasoning (do more or less depending on your spice preference-this isn't too spicy because my kids eat it- everyone is different though)

2 tsp cumin

¼- ½ tsp salt

Toppings:

1 can black beans

Cheese (optional)

Sour cream (optional)

Lettuce, tomato, salsa, hot sauce- get creative and mix it up. I often keep it basic. I do some cheese if I haven’t had much that day.

Shell:

My favorite is butter lettuce cups or cauliflower thins

My other family members like flour or corn tortillas- this is where everyone can be happy by choosing their own!

Cut chicken into small strips

Cut onion and red pepper into strips

Place some olive oil into skillet (use the amount you like mine can be ½-1 Tbsp)

Turn stove top heat onto medium/medium high. Once oil is heated add the chicken.

Add the Mexican seasoning, cumin, and salt. Cook chicken until mostly done (depending on size of chicken strips this can be about 8-10 min).

Place beans in separate pot and heat over low heat.

Add peppers and onion to cooked chicken and toss well to get covered in seasoning. Let cook, stirring occasionally for about 3 minutes to get pepper and onion soft.

Remove from heat. Place fajita mix, beans, and whatever toppings you choose onto your shell of choice. Enjoy!

This meal can take 20-30 minutes with prep and cooking. It’s an easy healthy dinner that’s easy to throw together. It may not win fancy meal of the year, but it’s tasty and my family happily eats it! That’s a win in my book.
